The short version

The decisions a LUT cannot make for you

One angle is the reference and the others are argued into agreement with it

Every partner has a named reference angle. On the lesson channel it is the camera called A; on one recipe channel it is the top angle; on another it is the one labelled Main. Whatever the side and detail cameras were doing, they get matched to that single reference, and so do the graphics sitting over them. Skip this on a three-camera shoot and you deliver three rooms.

The grade is chosen per instructor, per lighting state, per studio

A brand does not get one look. It gets a decision taken against the raw footage actually in front of you: who is on camera, what the daylight was doing, which room it was. Grading steps travel from a reference project so the grammar stays constant, then every one of them is retuned for the shot. A fixed technical transform for a camera and its log profile can stay constant, but the grade on top of it, the exposure, balance and contrast, is retuned per shot; the same finished look landing twice unaltered is a coincidence rather than a house style.

Light is masked towards whatever the viewer needs to see

On a recipe, the mixture in the bowl, the plated dish and the food while it cooks are each masked and lifted until they are the brightest thing against everything around them. Nobody watching will ever identify what happened. Their eye simply arrives where the teaching is, slightly earlier than it otherwise would, on every single shot of every single video.

Grain stays, and it is a fight worth having

Digital compression struggles with grain, and a platform's re-encode will quietly smear it. It stays anyway, set shot by shot, because the alternative is the plastic evenness that makes competent footage look like a template. Up to ten colour operations can run in parallel on one shot: the masked light, a vignette nobody consciously notices, and the grain that survived on purpose.

What grading is actually for

Matching, then looking

Two jobs, in that order. First the cameras are brought into agreement, because an audience will forgive an unusual look and will never forgive a jump in skin tone at a cut. Only then does a look go on. Doing it the other way round means grading each angle towards a slightly different idea of the same room.

The surfaces that fight you

White worktops blow out. Side cameras run darker and more contrasted than the one facing the subject. Keys and hands sit in shadow under a lid. Each of those is a known, repeating problem on a given set, which means it gets solved once and then applied, so nobody rediscovers it from scratch every month.

Sometimes the grade exists to hide the shoot

On footage from a working site the job is not beauty. It is covering blown highlights, rescuing washed-out colour and making clips that were never lit look as though they belong together. On material a brand has generated without a camera, the instruction reverses: keep it natural and plausible, and resist making it lovely, because the giveaway is always that something looked too good to have been in a room.
